These sausage rolls have their roots in the UK but were embraced and adapted by Australians as their own. For this Spanish-style Sausage Roll, I’ve blended elements from both traditions. I love sneaking veggies into sausage rolls like they do in Australia. In the UK, they use the meat from pork sausage in their rolls, while in Australia, they often use minced meat. So, I’ve mixed pork sausage and minced beef for a flavourful twist.

Spanish Style Rolls
Nothing screams Spanish flavour more than smoky paprika! It’s what makes the chorizo sausage so popular, after all. So I did the same here and used a lovely paprika called Pimenton de la Vera, a smoked sweet paprika (they also have a spicy version, which would work well here, too). This smoky flavour and extra garlic will bring another lovely dimension to the sausage rolls: a chorizo type of sausage rolls. You can find this special paprika online or in Specialized European markets.

Puff vs. Flaky Pastry
These two types of pre-made pastry sheets can be confusing to differentiate. They are similar; however, one contains more layers, which causes more fluff and deformation while cooking. So, I suggest a flaky dough for these sausage rolls, which will puff enough without deforming the rolls into croissants.
